Open Faced Shrimp Quesadilla
I love a good quesadilla. Sharp cheddar, mexican flavored shrimp, and a crispy tortilla. What's not to love about this dish? If it comes together in under 10 minutes, how can that not make you happy? We use the raw tortilla land tortillas that you can buy at Costco. If you've ever had a homemade tortilla, you know the mouth-watering, chewy glimpse of heaven your taste-buds are about to experience. These tortilla's have done most of the work for you, so you can spend less time in the kitchen... and more time gobbling up those compliments.


Ingredients: 
1 tortilla 
1 tbsp vegetable oil
12 shrimp
1/2 tsp cumin
1/2 tsp fajita seasoning
1/4 cup onion
1/4 cup sharp cheddar cheese
1/4 cup chopped cilantro

Directions: 
Warm your oil in a pan. Dice your onion and add it to the oil, cook until translucent. Add your shrimp, cumin, and fajita seasoning. Cook until pink. Remove shrimp from pan and set aside. Place tortilla in remaining oil in pan. When you see bubles begin to form, flip it over. Then add your cheese, shrimp, and cilantro. Cook until cheese is melted. Cut into triangles and serve. 


Hope these simple and slightly elevated weeknight meals can inspire the couch potato chef in all of us. If you have 10 minutes, you can do this.

Sweet Potato Enchiladas with Avocado Mole
Sometimes when you invent a recipe, the food heavens align and everything turns out perfectly. That's how I felt the first time I made these enchiladas. They are creamy and full of unique delicious flavors. This recipe is actually incredibly healthy when it comes to most enchilada recipes I've seen; but it doesn't taste like a healthy recipe! The whole time we were eating my husband was like "Does this have cream in it? Does this have chicken in it? How much cheese did you use? It tastes like there is a rich mole on this! This recipe is a keeper! Best new recipe yet!" High praise. While this recipe doesn't have an expensive protein or unhealthy cream in it, it totally satisfies. I love meatless meals that my husband approves of! Plus it comes together in a snap, I love easy meals that my stomach approves of! 



Ingredients:

6 whole wheat tortillas 
1 can black beans, rinsed 
1 large onion 
1 garlic clove 
1 avacado
3 Roma tomatoes 
2 tsp chili powder 
2 tablespoons vegetable oil 
1 tablespoon water
2 tsp oregano 
1 medium sweet potato, skinned & shred (should make about 1.5-2 cups) 
1 1/2 cup cheddar cheese, shredded
Salt and pepper 

Heat oven to 450. 

In a blender, puree the tomatoes, avacado, chili powder, half the onion, 1 tablespoon veggie oil, water, ½ teaspoon salt, and ¼ teaspoon pepper until smooth.

Heat 1 tablespoon veggie oil in a large skillet over medium-high heat. Add the other 1/2 of the onion and garlic and cook 3 minutes until soft. Add the black beans, sweet potato, oregano, and ¼ teaspoon of both salt and pepper. Cook stiring frequently until the sweet potatoes are tender, 4 to 6 minutes. Stir in 1 cup cheese. 

Spray a 9x13 pan with non stick spray. Fill your tortillas with the bean mixture and roll into enchilada shapes and fill pan. Cover rolled tortillas with blender sauce. Cover with remaining 1/2 cup of cheese. 

Bake for 15 minutes until cheese is bubbly. Serve and enjoy!

Turkey Hummus Wrap
Its so nice to have easy meals on hand, ready in your fridge that can be whipped up in 30 seconds. When hunger strikes, please tell me I'm not the only one who stares hopelessly in my fridge or pantry trying to decide what I'm willing to eat that is the easiest to throw together. I always have tortillas in my fridge. This week I whipped up a batch of this delicious hummus and used it all week. You can spread hummus on toast, chips, veggies, whatever you'd like. By far my favorite use for our hummus this week was this wrap. It was creamy and satisfying and like I said, super easy to make. Oh, and it's healthy too! 



Wrap Ingredients: 

1 Whole Wheat Tortilla
1/2 of an Avocado 
1/2 cup shredded turkey 
1/4 cup hummus (see recipe below) 
1/4 tsp salt 

Ok, are you ready for the super complicated directions? Spread the hummus, avocado, turkey, and salt on your tortilla and roll it up. Even my 2 year old could make this recipe! The hummus and the turkey are so filling, and the buttery avocado goes so well with it. Couldn't be more simple or delicious. 

If you prefer to make your own hummus like I do, rather than buying it, feel free to try the recipe below. You could also substitute the shredded turkey with turkey slices from the deli, or even baked chicken. The great thing about a wrap is you can be flexible and use whatever you have in the fridge! Plus this delicious hummus is so yummy you can sneak in celery, carrots, or whatever veggies you want and it won't take away from the deliciousness. 


Home Made Hummus: 

1 sixteen ounce can garbanzo beans, drained and rinsed
Juice of 1 1/2 lemons (about 6 tablespoons)
2 cloves garlic
1 tsp salt
1/3 cup tahini
1/4 cup water
1/4 cup olive oil

Add all of your ingredients except for the olive oil into a food processor and blend until smooth. While the processor is still running, slowly add your olive oil (so it can emulsify). Taste and adjust salt or acid as needed. Enjoy!
