Italian White Wine Salmon
We are big salmon lovers in our household. My husband always jokes that eating salmon makes him feel like he's getting smarter just because of all the omega 3's he's consuming. Since he's always happen when fish is on the menu, I have to get creative with my salmon recipes so we don't get bored. This little dish is a super simple way to cook up salmon in a flash, but pack a HUGE punch of delicious flavor in every bite. I love easy flavorful dishes, so this one is always on repeat.



Ingredients:
2 salmon fillets
1/2 cup white wine
2 garlic cloves, sliced thinly
2 tablespoons butter, sliced thinly
lavender herbs de provence (found here)
salt & pepper

Directions: Place your salmon in a small baking dish. Pour the white wine over the top of the fish. Then sprinkle with salt, pepper, and herbs de provence. Place your garlic slices and butter pats over the top. Cover baking dish with tinfoil. Bake at 450 degrees, 4-6 minutes per each 1/2 inch of thickness of the fillets.

This is such a delicious way to eat salmon that you may be tempted to throw out every other recipe in your repertoire. 
Skinny Salmon Casserole
This is a delicious recipe for a low fat good for you salmon casserole. Its like a traditional tuna casserole, only everything is swapped out for its healthier counterpart. Instead of butter? Olive oil. Instead of cream? Broth. Instead of tuna? Salmon. You get the idea. For all the healthy swaps in this recipe, you would assume it would taste "healthy", but this casserole is rich and satisfying. Its packed full of nutrients too, so you can really feel good about making it for your family. 



Ingredients: 
16 ounces egg noodle pasta
1/2 large onion
1 cup fresh green beans (trimmed and cut into bite sized pieces) 
2 tablespoons olive oil
Salt and pepper
4 tablespoons flour 
2 cans (4 cups) chicken broth
1 can (15 ounces) salmon 
1 tablespoon butter
4 springs fresh dill, chopped
1/2 cup panic bread crumbs

Serves 6-8

Preheat oven to 425 degrees. 
Boil your pasta in salted water according to the package instructions. 2 minutes before your pasta is finished, throw your green beans in with the pasta. Drain and set aside. 

While the pasta cooks, dice your onion. In a LARGE sauce pan warm your olive oil. Sauté the onion in the oil. Salt and pepper the onion. Cook until tender and translucent. Add your flour to the onion and stir so that all of the onion is well coated. Slowly add your chicken stock to the onions, while stirring constantly. Bring it to a boil then simmer so it can thicken. This can take up to ten minutes. Salt and pepper to taste. 

Add your salmon and dill to the sauce. Mix with the cooked pasta and taste. Add salt or pepper as needed. Pour into a greased 9x13 baking dish. 

Melt your butter and mix that with the bread crumbs (the butter allows your casserole to get golden brown in the oven). Sprinkle the bread crumbs over your pasta. 

Place in 425 degree oven for 17-18 minutes until golden brown on top.

Buttery Lemon Salmon with Dill
As a mother, when its suddenly dinner time, and you've spent your day chasing a toddler, making dinner can sneak up on you. Easy, simple, go to healthy recipes are a must. This meal makes it to our dinner table regularly. It's simple, satisfying, and good for you. Butter, lemon, and dill go better together than peanut butter and jelly in my opinion. You really can't mess this up. 


Ingredients: 
2 fresh salmon filets
1 lemon
2 springs of dill 
1 tablespoon butter
Salt & Pepper 


What you will do is thaw your fish if it's frozen according to the package instructions. Take your raw fish and place it on some tin foil. You want enough foil around the fish that you can tent it while it cooks. Salt and Pepper your fish. Then take your butter and slice it into thin little squares. Slice your lemon, place the lemon on top of the fish, place your butter on top of the lemon, place your dill on top of that. Tent your fish and then cook it in your oven for 30 minutes at 400 degrees. So simple! 


The fish will be fall apart tender, with a lovely sweet butterly flavor. It won't taste fishy at all, just wonderful savory omega 3 goodness. My husband says he can just feel his brain getting smarter when we eat this. Hopefully you can too.
