Braised Cinnamon Pork with Prunes
Today we are featuring one of Peggy's recipes. And if you know anything from reading this blog, you know that if it's one of Peggy's recipes, you are going to need to make. You are going to love it. You are going to make it for everyone that comes to your house because its so delicious. 

 
This is Peggy's Pork with Prunes. The meat is fall apart tender, sweet and juice, with a memorable sauce with such deep flavor you are going to want to drink it. 


Ingredients: 


1 Loin Pork Roast, pulled and tied (2.5 lbs)
Salt and Pepper
2 Tbs Vegetable Oil
1 Tbs Butter
2 Medium Onions finely chopped
1 Cinnamon stick 2 inches long
1.5 cups chicken stock (about 1 can)
1 cup dried pitted prunes
2 Tbs mild honey
2 Tbs fresh lemon juice

Directions: 

Heat butter in a heavy le creuset type dish
Cover your loin with oil
Season all sides with salt and pepper
Brown on all sides in pan until crust forms
Remove from pan
Add onions to pan and sauté (season onions with salt and pepper as well)
Return pork back to pan
Add water and cinnamon. 
Bring to a boil, then reduce to low and simmer for 90 minutes (turning meat from time to time)
Add prunes to liquid, cover, and continue to simmer for 30 minutes
Stir honey into liquid, basting pork as you go for about 5 minutes
Transfer meat to plate, remove prunes to a bowl
Cook sauce until thickened
Add lemon juice, add prunes back to sauce and season to taste
Arrange pork slices and spoon sauce over pork


This is seriously such an amazing meal. The flavors are just unique and incredible.

Pulled Pork Sliders
Pulled Pork Sliders make such a fun dinner menu. Everybody loves a little mini something. So a miniature sandwich full of delicious savory and sweet pulled pork will have everybody's stomachs feeling happy. 

For this recipe I suggest using Peggy's amazing ranch rolls for the sliders. But if you are looking to go a little bit easier, you can also purchase dinner rolls from the bakery as well. I won't tell. But for anyone feeling ambitious, these rolls would make these sliders heavenly! FOUND HERE



Ingredients: 

5 pounds pork shoulder
2 large sweet onions, diced
1 tsp lavender lemon pepper (found here)
1 clove garlic, minced
2 tsp dried oregano
1 tsp red pepper flakes
1 tsp salt
1 can chicken broth
1/2 cup barbecue sauce

Directions, 
Heat your crock pot and add your onions until soft. Pat your pork dry with a paper towel. Sprinkle all sides with lemon pepper, oregano, red pepper, and salt. Add to your crock pot. Cover with garlic and chicken broth. Heat only low for 8 hours or until pork is fall apart tender. Then cover with your favorite barbecue sauce and place meat onto rolls.

Lavender Grilled Pork Tenderloin with Mustard Dill Sauce
This meal comes together in a snap. You mix together a quick tangy sauce, fire up the grill, and you are good to go. Easy, flavorful dishes are my jam. 


Ingredients: 
16 ounces pork tenderloin
1/2 cup balsamic vinegar
3 tablespoons freshly chopped dill
1 1/2 tablespoons lavender honey
1/4 cup dijon mustard
1 tsp water
1 tsp lavender salt 
1 tsp fresh ground pepper

Heat your grill to 350 degrees. While that warms up whisk your sauce together and set aside. Sprinkle your pork lightly with salt and pepper. Grill until charred on each side and cooked through to 150 degrees, about 10-12 minutes per side. Remove from heat and let rest for 5 minutes. Cut into slices and drizzle your sauce over the top. 


You will love the tangy mustardy bite to this sauce and how much of a no brainer meal this is to throw together. Happy eating!

Pork Cavatappi
This savory pasta is packed with ooey gooey cheese, a rich pork sauce, and satisfying cavatappi noodles. Its an easy inexpensive family friendly dish. 


Ingredients: 
16 ounces cavatappi noodles
8 ounces shredded mozzarella cheese
4 ounces shredded parmesan cheese 
2 tablespoons olive oil 
1 pound lean ground pork 
Lavender Salt
Freshly Ground Pepper
2 cups tomato sauce
1 tablespoon italian seasoning
6 springs fresh basil
2 cloves garlic, minced


Directions: 
In a pot of salted water, boil your pasta until slightly under done, about 6 minutes. In a large skillet over medium high heat, warm your oil. Add your pork and heat until browned and cooked through (about 8-10 minutes). Add your lavender salt, pepper, and garlic. Cook for an additional 30 seconds. Then add your sauce, italian seasoning, and basil. Stir until combined. Grease a 9x13 pan and pour your noodles into it. Then cover the noodles with the sauce and mix. Then cover with both the parmesan and mozzarella cheese. Bake at 400 degrees until the cheese on top is bubbly and golden, about 20 minutes. You can top with additional basil leaves if desired. 


This is a quick, no brainer meal that will leave everyone in your family happy and with a full tummy. Enjoy!
