Storybook Waffles
Mike used to make what he called "Storybook Waffles" for the kids almost every weekend growing up. That's why it was such a treat to have him make them for his grandson this last weekend! They are fluffy and delicious, and the perfect special treat. 


Ingredients: 
3 eggs, separated 
2 tablespoons lavender sugar (Order HERE)
2 cups buttermilk 
1 1/2 cups flour
2 tablespoons butter, melted
1/2 tsp salt
1 tsp baking soda

(If you sub milk for butter milk, replace your baking soda with 2 tsp baking powder instead.) 

Toppings:
Fresh strawberries
Fresh whipped cream 
Sprinkle of lavender sugar 

We always use this fun circus waffle iron. It makes breakfast just that much more of a celebration.

Directions: 
In a medium sized bowl, beat the egg whites until stiff peaks form. Add sugar and beat 30 seconds longer, set aside. Beat egg yolks and milk together in a large bowl. Add flour, melted butter, salt and baking powder or soda, mix well. Gently fold the egg whites into the flour. Cook in a preheated waffle iron. Top with strawberries and cream and then enjoy! 




Lavender Biscotti


We have so many new readers on here each week, that I thought it was high time for us to re-feature one of Peggy's most popular blog posts of all time. She is the lavender magician, so of course all of her recipes will feature the Lavender Apple's wonder lavender products. This one features our fresh lavender buds. Have you ever tried cooking with them? Not only do they add a unique flavor, but they are so beautiful as well! You can get your own here if you are interested in testing them out in your own kitchen. 
Ok, now back to the recipe. This is a great biscotti recipe, not too hard and not too soft.....just right.

Ingredients:
1/4 cup butter
4 eggs
1 cup sugar
2 teaspoons vanilla extract
2 teaspoons almond extract
2 teaspoons anise (or orange) extract
1 teaspoon dried lavender buds
2 + 1/2 cups flour
1 teaspoon baking powder
1/2 cup sliced almonds

Start off by preheating the oven to 350 degrees.

Grind the lavender in a grinder or a mortar. Melt the butter in a medium bowl, add eggs, sugar, extracts and lavender, mix well using a large fork. Then add flour and baking powder, mix, add almonds, mix well. Place the clumpy dough on a buttered cookie sheet, in a form of a flat oblong (I use one of those cooking mats).


Bake 20 minutes or until the edges turn golden. Cool for 10 minutes, then remove from the cookie sheet, slice with a serrated knife into 3/4 inch thick slices. Place the cut side down on the same cookie sheet (no need to butter the cookie sheet again) and bake for 15 minutes longer. Turn over and bake another 5 minutes. Remove from oven, cool and store in an airtight jar. Serve with your favorite beverage.


Lavender Lemon Poppyseed Waffles
In my house, I live with two men. When it comes to breakfast, a hearty meat and egg filled dish is usually what wins the vote in our house. But on the rare occasion I get to make breakfast for myself, with no thought of the testosterone filled men in my life, waffles is what I always default to. I love a fluffy, crisp waffle that you can load up with delicious toppings. These waffles are special due to several unusual ingredients and I think you will find them to be a nice little wander away from your every day waffles. 


Ingredients: 
1/3 cup coconut oil
1 lemon
2 eggs
2 Tbs cane sugar
1 1/4 cup milk
1 1/2 cup flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp lavender salt 
poppy seeds 

Melt your coconut oil in microwave until it is in liquid form. Add that to a large bowl. Zest and juice your lemon into that bowl as well. Add your eggs, sugar, and milk, then wisk until combined. Add your flour, baking powder & soda, salt, and then add a few tsp of poppy seeds until you reach an amount that looks good to you. Simply pour your batter into a preheated waffle iron, and cook until crisp and golden. This will make about 4 full sized waffles. 



The combination of the zesty lemon with the floral notes of the lavender salt, make this a breakfast you will not quickly forget. Don't forget to top with your favorite waffle toppings! You can add coconut, strawberries, syrup, whatever strikes your fancy. Bon Appetite!
