Strawberry lemonade is one of my favorite drinks. So the other day when I had a hankering for desert, making this delicious flavor combo into a cupcake just made sense. These cupcakes are sweet with a little tang perfection.

2 lb carton strawberries, chopped
2 sticks butter at room temp
zest of1 lemon
4 eggs
1 cup butermilk
2 cups sugar
2 3/4 cup flour
1/2 tsp salt
1 tbs baking powder
1/2 cup lemonade
1 tsp vanilla extract
1 tsp lemon extract

Frosting Ingredients:
1 cup butter, room temp
zest from 1 lemon
4 cups powdered sugar
1/4 cup lemonade
1 tsp vanilla
1/4 tsp salt
1/4 tsp lavender

Mix your cake ingredients together, then bake at 425 for approximately 20 minutes. Allow to cool. Mix your frosting ingredients together, then top your cupcakes. Add extra cut strawberries as a garnish.

Homemade Granola with Lavender Honey and Fresh Berries
My newest go to breakfast these days is homemade granola with fresh berries and greek yogurt. Its full of protein, fiber, and good for you natural vitamins. Its a great way to stay full all morning, and gives you lots of necessary and welcome energy. Theres never a morning when I don't welcome this dish on my table.

 Granola Ingredients:
4 cups old fashioned oats
2 cups coconut
1 cup cashews, chopped
2 cups sliced almonts
1/2 cup vegetable oil
1/4 cup coconut oil
1/2 cup lavender honey (found here

Directions: Mix your oats, coconut, cashews, almonds, honey, and oil in a large bowl. Pour onto a baking sheet and bake at 350 degrees for 20 minutes, then stir. Bake for another 20 minutes or until golden brown. Once your granola is cooked, you can seal and store it in a Tupperware container. When ready to eat it in the morning, sprinkle with fresh cut strawberries, blueberries, and greek yogurt.

We love the crunch from the granola, the sweetness from the lavender honey, and pops of delicious juice from the berries. Get in all great nutrients like these early in the day and you will be feeling good all morning. Plus it tastes great too. Bon Appetite!

Storybook Waffles
Mike used to make what he called "Storybook Waffles" for the kids almost every weekend growing up. That's why it was such a treat to have him make them for his grandson this last weekend! They are fluffy and delicious, and the perfect special treat.

Ingredients:
3 eggs, separated
2 tablespoons lavender sugar (Order HERE)
2 cups buttermilk
1 1/2 cups flour
2 tablespoons butter, melted
1/2 tsp salt
1 tsp baking soda

(If you sub milk for butter milk, replace your baking soda with 2 tsp baking powder instead.)

Toppings:
Fresh strawberries
Fresh whipped cream
Sprinkle of lavender sugar

We always use this fun circus waffle iron. It makes breakfast just that much more of a celebration.

Love Peggy's cute cake wallpaper in her pantry!

Directions:
In a medium sized bowl, beat the egg whites until stiff peaks form. Add sugar and beat 30 seconds longer, set aside. Beat egg yolks and milk together in a large bowl. Add flour, melted butter, salt and baking powder or soda, mix well. Gently fold the egg whites into the flour. Cook in a preheated waffle iron. Top with strawberries and cream and then enjoy!
