Easy Lettuce Wraps
I have only ever tried one recipe for lettuce wraps. It is so delicious that I've never even been tempted to branch out and try a new one. I'm guessing if you make this for dinner tonight, you'll never want to try another recipe for lettuce wraps either. It has the perfect caramelized crunch and is surprisingly fresh and satisfying. 


Ingredients:
4 chicken breasts, diced
2 heads of bib lettuce
1/3 cup vegetable oil
2 onions, diced
4 garlic cloves, minced
2 teaspoons soy suace
1/2 cup cashews, chopped
6 basil leaves, julienned
salt and pepper to taste
1 cup asian crunchy noodles
hot sauce (optional)

Ingredients for sauce:
4 tablespoons soy sauce
2 teaspoons sesame oil
2 tablespoon brown sugar
2 tablespoon rice wine vinegar
1/2 teaspoon fresh ginger, minced
1/4 teaspoon crushed red pepper flakes

Directions:
Heat your oil in a pan over medium high heat. Add your chicken and cook until golden on all sides (about 5-6 minutes). Remove your chicken from the oil, and set aside. To your oiled pan add your onions and soy sauce. When your onions are brown and tender, add your garlic and cook for an additional minute. In a seperate bowl mix together all of your sauce ingredients and stir until the brown sugar is dissolved. Add the sauce and chicken back to your onions in the pan. Saute everything together until fragrant and warm. Fill your lettuce leaves with the chicken mixture and top with asian crunchy noodles, hot sauce, and fresh basil.

Korean Beef Bulgogi
We have some new Korean friends who are always telling us about their delicious Korean meals they are having. We decided we wanted to try an authentic Korean style dish, beef bulgogi. It did not disappoint! The meat ends up very tender with a sweet and salty kick to it. 


Ingredients: 
1 pound flank steak
10 bibb lettuce leaves for serving
1/4 cup green onion for service
2 cups white rice
Sriracha sauce for serving 

Marinade Ingredients:
5 tablespoons soy sauce
1/2 asian pear, grated
1 tablespoon rice wine vinegar
1/4 cup chopped green onion
3 cloves garlic
2 tablespoons sesame oil
1/2 teaspoon pepper 
1 teaspoon sesame seeds
1 tablespoon vegetable oil

Add your flank steak to a large zip lock bag and cover it with your marinade ingredients. Let sit in the refrigerator for 1 hour. Grill your steak until charred and done to medium (about 6 minutes). Let steak rest for 10 minutes before cutting it into slices. Serve in lettuce leaves filled with rice and topped with onions and sriracha sauce. 

This is a lovely way to prepare flank steak, especially if you are going gluten free.

Crispy Goat Cheese Salad with Shrimp and Mustard Red Potatoes
This salad has got it all. Wonderful smokey protein, crunchy greens, crispy salty cheese rounds, and soft mustardy potatoes. They all come together for a delicious and beautiful dish. If this salad doesn't say "get in my belly" to you, then I don't know how to help you. 


Ingredients: 

20 large shrimp
1 head romain lettuce, chopped
6 large red potatoes 
1 egg
1 1/2 cups breadcrumbs 
1 tsp lavender herbs de provence 
6 ounces goat cheese (in log form)
1 tablespoon dijon mustard
1 tablespoon vinegar
 lavender salt 
1/4 tsp pepper 
1/4 cup olive oil
Spray Olive Oil


Directions: 

Turn on your broiler. 
Boil some water in a sauce pan. 
Chop your potatoes into half length wise and then width wise so they form bite sized chunks. 
Add your potatoes to the boiling water and simmer until fork tender (about 15 minutes). 
In a bowl mix together an egg an 1/4 tsp pepper. 
In a separate bowl mix together your bread crumbs and 1/2 tsp lavender herbs de provence. 
Slice your goat cheese into 6 disks. 
Dip your disks into the egg then breadcrumbs, then place on a greased baking sheet. 
Spray the tops of your disks with olive oil cooking spray to help them crisp up, broil for 5 minutes. 
In a mason jar shake together olive oil, mustard, vinegar, 1/4 tsp lavender salt, and 1/4 tsp pepper.
When your potatoes are done and still hot, cover them in 1/2 of the dressing mixture. 
Let the potatoes cool in the fridge while you grill your shrimp. 
Pat your shrimp dry and then coat with lavender salt, herbs de provence, and pepper. Spray with oil. 
Grill on each side until pink and cooked through, with a nice char on them. 
Add the rest of the dressing to your lettuce and mix the lettuce and potatoes together. 
Serve the goat cheese rounds and shrimp on top of the bed of lettuce. 

This is a great end of summer salad. The shrimp and lettuce are nice and crunchy and the addition of the potatoes makes it very hearty. The dressing is so easy and just a tangy perfection. Enjoy!

Asian Citrus Steak Salad

The steak in this salad is so so good. After eating this for dinner tonight I have all sort of garlicy red meat dreams running through my head. This marinated meat would be good on a bed of rice, inside of an asian stir fry, so many things. I'll have to get back to you with my "to be continued" ideas for this delicious meat. But back to tonights featured attraction, this wonderful asian citrus steak salad. I love that this salad uses skirt steak. Its relatively inexpenisive, but will still fix your "I need red meat" craving. The soy and garlic flavors of the meat are balanced by the sweetness of the oranges and lime juice. Its a real winner. 
 

Steak Marinade:
  • 1/4 cup soy sauce  
  • Juice of 1 lime
  • Juice of 1 orange 
  • 1 tablespoon minced fresh ginger  
  • 1 large garlic clove, minced  

Salad Ingredients: 
  • 1 lb skirt steak
  • 1 1/2 tablespoons of good olive oil  
  • Juice of 2 limes 
  • Salt and Pepper 
  • 1 head green leaf lettuce
  • 1 head broccoli, washed, trimmed
  • 1 orange 
  • Chinese Noodles or Crispy Wontons for garnish
Directions: Place your soy sauce, lime juice, orange juice, ginger, and garlic all in a large zip lock bag. Add your steak to the bag and refrigerate for at least 8 hours. Heat up a grill or cast iron grill pan to medium high heat. Remove your steak from the marinade bag and discard the marinade. Grill the meat for 2 minutes on each side, then let rest on a cutting board for 10 minutes. What a beautiful piece of meat!




While the meat rests, assemble your dressing. Your dressing is simply your olive oil, juice of 2 limes, and a little salt and pepper to taste. Whisk together. Peel and cut up your orange into small slices. Once your meat is done resting, cut it diagonally into small bit sized slices. Place your lettuce, oranges, broccoli on a platter, lay your steak on top of the salad and add your dressing. Add your Chinese noodles for a little crunch. 
 

This is a nice hearty salad because of the red meat, but it still manages to not feel heavy due to the sweetness of the citrus. Its a lovely easy meal. And the rich flavor the marinade adds to the meat is delish. Enjoy!
