Blueberry Lavender Coconut Icecream
Today for our lavender recipe highlight, I wanted to focus on Ambitious Kitchen. The thing I love about Ambitious Kitchen is the majority of their recipes are very healthy! I love eating well and eating delicious food. If it happens to be healthy in addition to all of that? Then yes! Yes! and Yes. If you aren't already reading Ambitious Kitchen, well you should be. My favorite recipe of theirs is this gorgeous Wild Blueberry Lavender Coconut Ice Cream. Seriously. So so good. Ambitious Kitchen used almond milk to make this as well, which makes me love it even more. All of the good protein but none of the yucky stuff you can find in regular dairy.

Hope this recipe from them inspires you to get cookin' this weekend. Have a good one!
Healthy Cookies

Did you ever see the recipe on this blog for our Kitchen Sink Cookies? They are oh so good. I love them because they are packed full of healthy ingredients like omega 3's and lots of protein.  I am such a cookie lover, and these kitchen sink cookies are seriously my favorite. Since I'm a cookie person, I realized that I needed to start baking healthier versions of all of my favorites. This meant, less butter, less sugar, and more healthy ingredients added. Today we are featuring an adapted version of our beloved kitchen sink cookie recipe. I'm simply calling these Healthy Cookies. They are full of healthy ingredients, but also lower in fat and sugar than a traditional cookie. They have several kinds of fruit, flax, and nuts. You can munch on these and actually feel good about it! They will fix your cookie craving and do it in a way that is not completely bad for you. Enjoy!

Ingredients
1 mashed banana
3/4 cup white sugar
3/4 cup brown sugar
1/2 cup butter room temp
2 eggs
1 teaspoon vanilla
1/8 cup flax
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoon baking soda
2 cups rolled oats
2 cups Cornflakes or Branflakes
1 cup coconut
1 cup chopped nuts (walnuts or pecans)
1/2 cup raisins
1/2 cup semi-sweet chocolate chips

Bake at 350 degrees for 10 minutes. You want them just barely golden on the outside edge. If you use a cookie scoop, you should get about 45 cookies from this recipe.

Lavender Recipe Round Up
It's that time of the week again. Time to round up some of the most creative and delicious lavender recipes from around the internet. Check out all of these two talented bloggers and chefs!

If there is anything the Nelson family loves, its a good beignet. Living in France, they got their fix of them. But oh how wonderful do these Lavender Vanilla Bean French Beignets from Gringalicious look? I mean seriously, check out her site and make them. Like NOW.

And yes, this does look quite ambitious, but its fitting because this wild blueberry coconut icecream is from Ambitious Kitchen. I am such a huge fan of theirs and this is just one more of their recipes that I have to add to my "to-do" list.

Hope this gives you a little sweet inspiration for your weekend lavender adventures. Enjoy!
How To Mail A Coconut
Ever go on a beach vacation and want to send something fun back home to loved ones? Well today we have an easy and whimsical DIY for you. Painted coconuts! Did you know you could send a coconut through the US mail? How fun would it be for a child to open their mailbox and be surprised with a beautiful coconut?

All you have to do is paint a cute picture on one side of the coconut. We obviously chose an outline of the state of florida, but you could do something similar for any country you are visiting. You could also do an easy ombre sunset if you are less artistically inclined. On the other side of the coconut, you simply write a quick message and the address of your recipient, similar to a post card. Drop your coconut off at the post office and they will affix postage to it. What a fun, affordable, and adorable gift!

Who will you surprise with this unexpected and creative idea?
