Lemony Shrimp with Asparagus in a White Wine Sauce
If you're not a super foodie, hearing the words "white wine sauce" in a recipe title can be intimidating. But it actually can't be further from the truth! A white wine and butter sauce is one of the simplest biggest bang for your buck tricks out there. This sauce is flavorful, warm, and goes perfect with almost any pairing. Try this delicious and easy seafood meal today and you will enjoy a healthy and simple weeknight meal. 


Ingredients: 

15-20 large raw shrimp, tails on
1 cup uncooked penne pasta
1/2 bunch fresh asparagus, chopped into 1 inch pieces
1/2 cup freshly grated parmesan cheese
1/2 cup white wine
1 tablespoon fresh parsley 
2 tablespoons butter
2 cloves garlic, minced
juice of 1/2 a lemon
salt and pepper

Directions: 
In a large pot of salty water, boil your pasta for 8 minutes. While that boils, in a skillet melt your butter and add your garlic ,white wine, and shrimp. Toss your shrimp until pink on both sides, about 6 minutes. At this point, throw your asparagus into your pasta water so it can boil for the last 2 minutes with the pasta. Once your pasta is done add it to the shrimp, mix in your cheese, add your lemon and parsley and adjust seasoning.

Easy Weeknight Dinner Idea for Two (Vegetable Naan Pizza)
This week I wanted to feature a couple of easy weeknight dinner ideas for two. Recently I've been cooking for just two of us. Its so easy to default to making the same go to familiar meals all week long. But there are plenty of delicious AND easy meals out there that can help you get out of your routine rut when you are only cooking for two. These meals can also easily be doubled or tripled for those busy moms out there with large families. 

The first meal this week I wanted to highlight is a vegetable naan pizza. It's crispy, savory, and a cinch to throw together. 


Buy pre-made stone fire naan breads. I prefer the full size, but if you are baking for children, the smaller personal size will work great too. The secret to a good home made pizza is the ingredients. Skip the preshredded mozzarella and go with fresh buffalo mozzarella, or in our case, we used goat cheese. Skip the premade hormel pepperoni, and use salami or proshutto to switch things up. Wash and coat some asparagus with olive oil and scatter across your pizza. Then, the finishing is also very important. Use a balsamic glaze to add acidity and sweetness. Top with fresh italian herbs and a sprinkle of lavender salt. Bake in an oven until your cheese bubbles and your naan is golden around the edges. This idea is simple, healthy, and most importantly delicious.

Roasted Asparagus
So many of my friends are currently scouring the internet looking for delicious and easy side dishes for their holiday meals. During the Christmas season, so many things we eat are heavy and rich. A nice light side dish or roasted vegetables is not only a welcomed contrast to everything else on our plates, its the perfect comforting way to keep our holiday waist lines in check. 


When it comes to roasting vegetables, technique is key. It is so easy to turn your flavorful crunchy friends into mushy lifeless limp versions of their former selves. Luckily Peggy has a wonderful recipe for roasted asparagus for us. Its quick, easy, and simple. 


Ingredients: 
1 pound fresh asparagus
1 tbs. olive oil
salt and pepper

Directions: 
Preheat oven to 450. Trim the woody ends off of the asparagus. Spread the spears in a single layer on a large cookie sheet. Make sure the spears aren't touching so they will roast rather than steam. Drizzle with oil and sprinkle with salt and pepper. Roll, to coat evenly. Roast the asparagus until lightly browned, about 10 minutes. Shake the pan half way through cooking to ensure even roasting.
